After checking on the boat this morning, David went to the fish market and picked up a nice filet of fresh Dorado for dinner. No corned beef for us! Went for a walk around the Marina. Plenty of activity happening with the Regatta Copa Mexico.
We love living right next to a fish market where you can get any fish you want so fresh and so inexpensive. This was 1.25 kilos and was $170 pesos.
It was delicious. Macadamia Nut crusted with coconut milk. Just need to figure out how to use the stove better without q broiler. Need to cook at higher temps to try and brown the topping.
